Mini Durian Crepe

 It's a durian season in whole Malaysia and this is top of the list of most popular kuih right now.... For durian lover this is a must try! It is heavenly delicious with durian flesh enriched with sweet whipped cream. My earlier version is in the link here. This time I made it a bite size - see photo below comparing to a match box. This version has a different crepe and filling texture - personally I like the earlier version better which has a softer skin and more firm filling.

Makes 29 pieces
INGREDIENTS-CREPE:
40g Plain Flour
40g Tapioca Flour
20g Cornflour
20g Hoen Kwe Flour / Custard Flour
1 Egg - grade A
1 tbsp Melted Butter
130ml Milk
50ml Water
(adjust if needed) 
A pinch Salt
1 tbsp Sugar
Yellow Colouring


METHOD:
1. Combine al ingredients & mix until smooth.
2. Heat up a round pan (4" diameter) & lightly grease.
Pour some batter & let it spread by tilting the pan around.
Lift the crepe out once cooked.
Repeat until all batter used up.
3. Place some custard cream filling in the centre of a crepe, top with durian flesh.
Fold like a pillow shape. Repeat all.
Chill before serve.

INGREDIENTS - CUSTARD CREAM FILLING:
250ml Milk
1½ tbsp Custard Flour
2 tbsp Sugar
¼ tsp Salt
1 Egg Yolk
150g Durian Flesh
200ml Non-dairy Whipping Cream

METHOD:
1. Combine all ingredients, except whipping cream, until smooth.
Cook above small fire until thickened. Cool.
2. Whip the cream until stiff.
Mix the two & ready to use as filling.

Sekarang ni musim Durian Crepe.... al maklum musim duyan kan. Macam2 versi resepi yg di tayangkan. Along dah cuba versi K1 dulu kat sini yang hanya menggunakan tepung gandum dan kali ni nak cuba versi yg menggunakan pelbagai tepung pula. Resepi ni cantik berkilat tapi crepe nya agak kenyal berbanding dgn versi pertama dulu - ni mesti sebab letak tepung ubi. Kalau tanya Along, Along lebih suka versi pertama dulu. Along juga lebih suka inti whipping cream shj di bandingkan inti kali ni yg menggunakan cream kastad.

Along buat saiz kecil2, tengoklah gambar perbandingan dgn kotak mancis tu. Senang nak ngap, sekali masuk jer.

BAHAN2 CREPE:
40g Tepung Gandum
40g Tepung Ubi
20g Tepung Jagung
20g Tepung Hoen Kwe / Tepung Kastad
1 biji Telur saiz A
1 sb Minyak Mazolla / Mentega Cair
130ml Susu Segar
50ml Air
(sesuaikan kepekatan) 

Secubit Garam
1 sb Gula Halus
Pewarna Kuning


CARA2:
1. Satukan kesemua bahan, tapis jika bergentel.
2. Panaskan kuali leper kecil (4" diameter) & lengserkan dgn tisu yg di minyakkan.
Tuangkan sedikit adunan & lenggangkan sehingga rata.
Angkat apabila crepe masak tanpa di balikkan.
Buat sehingga habis.
3. Ambil sekeping crepe, letakkan krim kastad & sedikit isi durian.
Bungkus seperti bantal.
Sejukkan sebelum dihidangkan.

BAHAN2 KRIM KASTAD:
250ml Susu Cair
1½ sb Tepung Kastad
2 sb Gula Pasir
¼ st Garam
1 biji Kuning Telur
150g Isi Durian
200ml Non-dairy Whip Cream

CARA2:
1. Satukan kesemua bahan, kecuali whip cream, sehingga sebati.
Masak sehingga kental dgn api kecil.
Sejukkan.
2. Pukul whip cream sehingga bertanduk.
Satukan dgn kastad tadi (Along tak campur terus semua nya, campurkan sedikit2 ke dlm mangkuk kecil setakat yg di perlukan).

 Long time no hear from Liana.... miss her? Liana enjoyed eating Durian Crepe so much... watch her action!

Makcik2 & Kakak2 yang merindui Liana.... tengoklah betapa Liana dah membesar - dah lebih setengah tahun kan Liana tak kelihatan. Sekarang Liana dah 3 tahun lebih & tahun depan akan bermula sekolah tadika. Rambut Liana feshen pendek sekarang ni sebab senang nak di uruskan supaya kelihatan kemas. Liana amat petah bercakap sekarang ni tapi masih manja sekali & masih suka di dukung. Sakit pinggang mama dia asyik dukung walaupun dalam rumah. Meh tengok Liana makan Durian Crepe yg mama buat comel2 hari tu. Liana boleh makan berketul2 sekali hadap, suka hati mama dia tengok. Darwish, meh lah makan sekali dengan Liana...  Rindu gak dengan menantu kantan sorang ni.... Jangan malu2, bawa adik Dania datang sekali ya....

Kek Lapis Keju (Cheese Layered Cake)

 I was in a high spirit again... so here come another Sarawak layered cake! The good thing about this recipe it uses only 5 eggs unlike the typical Sarawak layered cakes which ranges from 10-30 eggs and yet it produces a reasonable size of cake. The texture is soft and it plainly delicious although ones may not be able to tell the cheese flavour. I guess the added cream cheese soften the texture apart from making it tasty. My hubby and children love this cake. Actually I am expecting a visitor this coming week-end, so hopefully the cake survives until then....hehe.

Eh.... terrrajin lah pula melapis akhir2 ni....hehe. Kek ni sedap tau..... lembut jer.... my hubby & anak2 semua kata sedap. Along suka resepi ni sbb menggunakan hanya 5 biji telur. Kebiasaan nya kek lapis menggunakan 10-30bj telur bergantung pada resipi. Sebenar nya Along buat ni sebab ada tetamu FB dari KL yg akan berkunjung ke rumah hujung minggu ni.

BAHAN2:
200g Butter
125g Cream Cheese
5 biji Kuning Telur
3 biji Putih Telur
140g Gula Castor
1 sb Ovallette
125g Tepung Gandum*
1 st Baking Powder* (* ayak sekali)
50g Air Ais

CARA2:
1. Pukul butter sehingga kembang.
Masukkan cream cheese & pukul sehingga sebati.
2.  Dlm mangkuk berasingan, pukul telur, gula & ovallette sehingga kembang.
Masukkan tepung* & air ais berselang-seli sehingga sebati.
Masukkan adunan butter & cream cheese sehingga sebati.
3. Ratakan 4 sudu makan ke dlm tin yg di lapik kertas & di gris.
Bakar dengan api Grill sehingga permukaan nya perang.
Tekan supaya rata & lapiskan dengan adunan seterus nya.
Bakar selapis2 sehingga habis.



Black Pepper Beef Liver II

My younger brother & I cooked similar dish for my sister's wedding recently but to our dismay it was stolen from the table minutes after the bride & groom walked out from it. There were two plates of it and both were gone but other dishes prepared by the caterer were still there. Not only it was delicious but also beautifully decorated. Too bad I didn't carry my own camera to snap any photo. Since I had some beef liver from the qurban this year, I recook the same dish last night for hubby & children - they all love it! I made slight variation actually and simplified the method and ingredients.

INGREDIENTS:
1kg Beef Liver- sliced
1 tbsp Black Pepper*
1½ tbsp Fennel Seeds*
1 tbsp Cumin Seeds*
½ " Ginger*(* blender)
1" Ginger**
2 cloves Garlic**
1 Big Onion** (** sliced) 
Salt, Sugar

CARA2:
1. Marinate blended ingredients* for about 30min.
2. Boil marinated liver with some water, salt & sugar until tender & water almost dry.
Add in few tbsp oil & sliced ingredients**.
Cook until sliced ingredients are slightly soften.
3. Serve with rice.

 Hubby & anak2 kata sangat sedap! Al-kisah, Along dan brother masak lauk yg sama untuk hidangan pengantin semasa perkahwinan adik Along bulan Nov lepas. Untuk hidangan pengantin, hati tu Along hiris besar sedikit dan di hias dengan cantik. Malang nya sebaik shj selesai majlis santapan pengantin, dua pinggan lauk hati tu tetiba lesap di kebas. Lauk lain takda pula di kebas... (kek lapis Along pun lesap juga sebenar nya)... isyk2... teruk betul orang zaman sekarang ni tapi takpa lah halalkan je lah. Along terlupa bawa kamera, so takda gambo lauk tu, cameraman kata belum siap proses nak tunggu 3 bulan....

BAHAN2:
1kg Hati Lembu- hiris 
1 sb Lada Hitam*
1½ sb Jintan Manis*
1 sb Jintan Putih*
½ " Halia*(* blender)
1" Halia**
2 ulas Bwg Putih**
1 biji Bawang Besar** (** hiris) 
Garam, Gula

CARA2:
1. Perap bhn2 blend* dgn hati selama lebih-kurang 30 minit.
2. Rebus hati yg di perap dgn sedikit air, garam & gula sehingga lembut.
3. Apabila air nya kering, tuangkan beberapa sudu minyak & masukkan bahan2 hiris**.
Angkat apabila bahan2 hiris sudah layu.
4. Hidangkan dgn nasi.

Upside-Down Pear Chocolate Cake (Again)

 This is a repeat recipe but this time I made slight variation to it. Instead of using sliced I used halved pears. I also change the recipe for the caramel topping this time. I made this to served the FB women gathering yesterday and because everybody was too full, I let them pack away and hope they enjoyed it at their own sweet time.

 For recipe, refer here but I used a simpler caramel recipe this time as topping:

TOPPING:
50g Butter
2/3 cup Brown Sugar
Melt in a pot until rapidly boiled and pour into prepared pan. Arrange pear on top then pour the cake batter. Bake per remaining instruction

BAHASA MALAYSIA VERSION
 Along buat resipi ni lagi dan kali ni untuk jamuan gathering bersama kekawan FB kelmarin tapi kali ni Along ubah suai resipi nya - buah pear tu Along belah dua sahaja dan tidak di hiris2 - selain dari itu Along tukarkan topping gula hangus dengan resipi yg lebih mudah. Di harap hidangan yg tak seberapa ini dapat memenuhi keinginan sahabat Along tu ya.

Untuk resipi sepenuh nya, sila rujuk di sini. Di bawah ini cuma resipi topping gula hangus yg di gunakan pada kali ini:

TOPPING:
50g Butter
2/3 cwn Gula Perang
Masak kedua2 bahan sehingga berbuih2.
Tuangkan ke dlm tin yg telah di sediakan.
Aturkan buah pear di atas nya dan tuangkan aduanan kek coklat.
Bakar seperti tertera pada resipi.


Milo Brownies

 Liana's Montessori had a graduation day last Friday for those completing the kindergarten level (age 6) and for her it was her nursery graduation as she will be moving to a different school for her Level 1 (age 4) Kindergarten  next year. The Milo Brownies was my pot luck to her Montessori and the teachers gave good feedback. It is moist and tasty with milo and melted chocolate chips.

  The theme was "One Malaysia" so the kids dressed up in traditional costumes, see Liana in her baju kurung.

Size: 8" square
INGREDIENTS:
125g Dark Chocolate - chopped
157g Unsalted Butter - softened
131g Brown Sugar
2 Eggs
125g Plain Flour
1/8 tspn Baking Powder
2½ tbsp Cocoa Powder
75g Milo Powder
78g Dark Chocolate Chips/Chunks


METHOD:
1. Preheat oven 180°C.
Lightly butter 8in baking pan lined with foil, leaving 1in overhang on both sides.
2. Melt chocolate and butter using double-boil method until smooth.
Remove from heat and set aside to cool for a few minutes.
Add in sugar and eggs and stir to combine.

Sift the flour, baking powder and cocoa over the chocolate mixture.
Add in Milo and stir until smooth.
Mix in chocolate chunks/chips.
3. Pour the mixture into the prepared pan and bake for 30 minutes or until just set – do not overbake.
4. Cool the cake in the pan, then carefully remove it using the foil handles.

Brownie ni memang sedap sangat, sesuai untuk kanak2. Oleh itu Along pun buatlah untuk pot luck sekolah Liana Jumaat lepas semperna hari graduation Liana from Montessori. Tahun depan Liana akan pindah sekolah untuk masuk Level 1 tadika. Dah tradisi dari abang2 Liana mesti masuk ke sekolah yg sama, walaupun sekolah sekarang dekat dgn rumah. Cikgu2 kata brownies ni sedap dan sememang nya pun sebab tekstur yg lembab, ada coklat cip dan secukup rasa.

125g Coklat Gelap - cincang
157g Mentega tanpa garam - lembutkan
131g Gula Perang
2 bj Telur

75g Milo
78g Coklat Cip


CARA2:
1. Panaskan oven 180°C.
Lapik tin dgn kertas aluminium - biarkan terlebih panjang dari tin 1".
2. Cairkan coklat & mentega dgn kaedah double boil sehingga licin.
Sejukkan beberapa minit.
Masukkan gula & telur & kacau sebati.
Ayak tepung, baking powder & koko ke dlm adunan coklat.
Masukkan Milo & kacau sehingga sebati.
Masukkan coklat cip.
3. Tuang adunan ke dlm tin & bakar selama 30min - jgn terlebih masak.
4. Sejukkan sebelum keluarkan dari tin dgn mengangkat lebihan kertas aluminium.

Fresh Mushroom Spaghetti Bolognese

Perfumed flowers at the back is a gift from good friend....
 My lovely friend, sis Marina brought me fresh mushroom from KL - it smelled so good that I imagined it will be deliciously served with pasta. I was right.... my whole family commented that it was so extraordinarily delicious! Thanks so much sis for your thought - may Allah bless you always!

Served 4-5 persons
INGREDIENTS:
1  packet Spaghetti - boil until ala-dente 
4 tbsp EV Olive Oil
4-5 cloves Garlic - chopped 
1 Big Onion - chopped 
1 bowl Fresh Mushroom - sliced 
1 small Taiwan Cucumber - sliced 
1 tbsp Chili Oil
1 tsp Ground Black Pepper
250g Minced Beef
1 can (450g) Tomato Puree
Fresh Basil & Parsley - chopped
1 can Water
Salt & Sugar
Grated Cheese

METHOD:
1. Heat up Olive oil & stir-fry garlic until fragrant.
Add in big onion & stir for a minute.
Add in mushroom & stir for a minute.
Add in cucumber & stir for a minute.
Add in chili oil, black pepper, beef & stir for a minute.
Add in tomato puree, herbs, salt & sugar.
Add water & let it boil.

2. Serve spaghetti with bolognese sauce & sprinkle with cheese.

BAHAN2:
1  packet Spaghetti - boil until ala-dente

4-5 ulas Bwg Putih - cincang
1 bj Bwg Besar - cincang
1 mangkuk Cendawan Segar - hiris2
1 bj Timun Taiwan - hiris
1 sb Cili Oil 
1 st Lada Hitam tumbuk
250g Daging Cincang
1 tin (450g) Tomato Puree
Daun Basil & Parsley - cincang
1 tin Air
Garam, Gula
Keju parut

CARA2: 
1. Panasakan olive oil & tumis bwg putih sehingga wangi.
Masukkan bwg besar & kacau seminit.
Masukkan cendawan &  kacau seminit.
Masukkan timun & kacau seminit.
Masukkan cili oil, lada hitam, daging & kacau seminit.
Masukkan tomato puree, 
Add in cucumber & stir for a minute.Add in chili oil, black pepper, beef & stir for a minute.
Add in tomato puree, herba, garam & gula.
Masukkan air & biarkan menggelegak.
2. Hidangkan spaghetti bersama kuah di taburi keju parut.

 Been craving for this menu but didn't managed to make it because giving way to the kids for their preferred menu - the Petai has shrinked slightly after several days in fridge. Luckily, that night the kids went out to play futsal with friends and therefore had just few dishes along the white rice: fried Kembung, Dabai, Green Chili, Turmeric flower (from my garden) and the above dish.... walaaaa.... I had double plates of rice that night & damn with diet!
 Recipe in English will be provided upon request. I'm saving an effort to do so for now as I believe this authentic dish is only popular amongst Malays. If I'm wrong, do shout for translation.

Walaaaa.... sedap nya makan nasi berulam cili hijau & bunga kunyit cicah dengan Sambal Tempuyak Petai & Udang, ada pula ikan goreng panas2!! Udang - potong janggut

10 biji Cili Padi*
1 biji Cili Hijau*
3 ulas Bwg Merah* (* blend)
3-4 sb Tempuyak
1 mangkuk Santan
1-2 helai Daun Kunyit - hiris halus
1 batang Serai - hiris kasar
Garam

CARA2:
1. Masukkan kesemua bahan ke dalam periuk & masak sehingga pekat.
2. Hidangkan dgn ulam kesukaan anda (spt timun, bunga kunyit, cili hijau, dll) beserta nasi panas & ikan goreng.

Durian Isu / Isau from Sarawak

 I'm sure many of you have not seen these types of durian unless you are from the Borneo. There are few types of the untypical durian that I've found. The above red durian is a very rare species and the photo above is shared by a friend from Limbang, I hope she will bring some for me this coming week-end. The one below is deep bright orangy color known as Isu and some call it Isau. The taste is quite distinct from the typical durian but equally stench.

Another type of durian which has orangy vivid color is Ukak but the taste is not similar to either Isu or typical durian. You can see Ukak that I've posted last time here.
 See the color difference compared to the ordinary durian - such a deep vivid orange color. Wait for my next post to see what I create from Isu apart from eating them raw.....! Many thanks to Q for the two packs of durian below!

Durian Butter Cake

 Here it comes..... my Durian Isu Butter Cake! Look at the beautiful bright colour which is natural  from the Durian Isu that I posted yesterday here. Brought some to office and many feedbacked that it is delicious. The cake texture is also moist and soft. If you are a durian cake lover, this recipe is a must try.
Recipe is adapted from Agnes Chang's but modified to make it creamier and richer with durian taste - method has also been simplified. The outcome is a very moist and rich durian cake!

Makes 1 standard bundt pan
INGREDIENTS:
250g Butter
200g Caster Sugar
4 Eggs
300g Durian Flesh*
4 tbsp Milk* (* pureed together) 
240g Self-Raising Flour**
1 tbsp Cornflour**
1/4 tsp Salt** (** mix) 

METHOD:
1. Cream butter & sugar until light.
Add in egg one at a time until well blended.
Add in dry ingredients** bit by bit until well mixed.
2. Bake 180C for 40-45 minutes until cooked.

BAHASA MALAYSIA VERSION
Along buat kek ni untuk memenuhi permintaan sahabat FB tapi Along guna durian Isu supaya warna nya terang dan cantik dengan warna asli tanpa pencelup tiruan. Along ubah-suai resipi asal supaya kek nya lebih lembab. Along bawa ke opis belanja member2 & ramai yg gemarkan nya.

CARA2:
1. Pukul butter & gula sehingga gebu & putih.
Masukkan telur satu persatu sambil di pukul.
Masukkan campuran tepung** sedikit2 sambil di gaul rata.
2. Bakar 180C selama 40-45 minit sehingga masak.



Stir Fried Mushroom (Cendawan Goreng Daun Selasih)

 Not sure what the name of the mushroom.... it was a gift from sis Marina when she visited Miri last week. It kept well in fridge - just wrap with newspaper - leaving in a plastic bag will make it soggy. I stir fried it with garlic and basil leaves and it was crispy and delicious! Thanks so much sis Marina for your kind thought!

INGREDIENTS:
1 bunch Mushroom (like the above photo) 
3 cloves Garlic - chopped 
1 Red Chili - sliced 
1 tsp Nampla / Fish Sauce
Basil Leaves
Salt

METHOD:
1. Heat up few tbsp oil & stir-fry garlic & sliced chili until fragrant.
Add in rest of ingredients, few tbsp water and stir until mushroom is cooked.
2. Serve immediately with rice and other dishes.... nyummy!

1 st Nampla / Sos Ikan
Daun Selasih
Garam

CARA2:
1. Panasakan sedikit minyak & tumis bwg putih & cili sehingga garing.
Masukkan kesemua bahan2 yg lain, sedikit air & kacau sehingga cendawan masak.
2. Hidangkan segera dgn nasi putih & lauk lain.



Bubur Ca-Ca Durian

 I am still enjoying the durian season.... there are so many types of delicious food that can be created from durian. Here is Bubur Ca-Ca with durian touch... such a lovely dessert to be enjoyed in the afternoon tea with cup of coffee. Just gotten the Ca-Ca bits from lovely sis Marina recently, thanks so much... love ya! My hubby & two boys love this dessert so much.

INGREDIENTS:
½ packet Bubur Ca-Ca bits
10 Durian Pulp with Seeds
½ pot of Coconut Milk 
White Sugar
1 tbsp Palm Sugar
1 Screwpine Leaf
½ tsp Salt

METHOD:
1. Boil Bubur Ca Ca bits until soft & drain.
2. Place all remaining ingredients in a pot & boil.
Add in the cooked Ca-Ca bits & cook for further 5 minutes.
4. Serve warm.

Masukkan Ca-ca yg telah di rebus tadi & masak 5 minit lagi.

 My dear good friend, David delivered a box full of durian fresh from his FIL's farm, straight to my house the moment they arrived from Kuching. It was such a good quality of durian with very small seed and creamy flesh. He has been craving for my durian cream puffs since the last time I served during Liana's bithday party. This time he can sure giggle to satisfaction as I delivered a box of durian cream puffs in return.... good to know the whole family & his friend enjoyed it so much. Apart from that, our office mates were delighted to have some share too.

INGREDIENTS:
250ml Water
½ tsp Sugar
100g Butter
125g Self-raising Flour or Plain Flour+ 2tsp Baking Powder
3 Eggs

METHOD:
1.Place water, sugar & butter in a pan and boil.
Off fire, add in flour until well mixed.
Cool it and beat in egg one by one until well mixed.
2. Pipe onto baking tray.
3. Bake 220C for 30 minutes until well puffed-up and golden color.
4. Cool on rack and inject with durian cream.

DURIAN CREAM(by Roz@HomeKreation):
Whisk 200ml cream until stiff.
Pureed about 8-10 durian pulps & mix well into the whisked cream.
Ready to be used.

250ml Air
½ st Gula
100g Butter
125g Tepung Naik Sendiri / Tepung Gandum+Baking Powder
3 bj Telur

CARA2:
1. Masukkan air, gula & butter ke dalam periuk & didihkan.
Tutup api, masukkan tepung & kacau sehingga sebati.
Sejukkan & masukkan telur satu-persatu sambil di pukul sebati.
2. paipkan ke ats dulang pembakar.
3. Bakar 220C selama 30 minit sehingga kembang & berwarna perang.
4. Sejukkan puffs & kemudian inject durian krim.

DURIAN KRIM(by AlongRoz):
Pukul 200ml krim sehingga kental.
Blend 8-10 ulas isi durian & campurkan ke dalam krim.
Sedia untuk di gunakan.

 Durian... durian.... durian... yes and more to come! I am enjoying the durian season as much as I can. This was made coupled with the Durian Cream Puffs that I posted yesterday for sharing in the office. Very good feedback received from many including of course my loyal supporter... my hubby!

The kuih has smooth texture, moderate sweetness and lovely durian aroma + flavour!

INGREDIENTS:
4 Eggs
350g Sugar
350g Flour
350g Durian Flesh
2 tbsp Rice Flour
400ml Coconut Milk (from packet)
300ml Water
2 tbsp Melted Butter
½ st Salt
Yellow Coloring

METHOD:
1. Place all ingredients in a food processor/blender until smooth.
2. Pour into a tin lined with greased aluminium foiled.
3. Bake 180C for 1 hour or until fully cooked.
4. Cool the kuih before slicing.

Kuih bingka ni Along bubuh durian banyak2 & rasa nya mmmmmmmm.... memang lemak berkrim dengan rasa durian asli, kuih nya pula licin lembut dan sedap tekak menelan nya....hehehe. 350g Gula Pasir
350g Tepung Gandum

2 sb Tepung Beras
400ml Santan Kotak
300ml Air
2 sb Mentega Cair
½ st Garam
Pewarna Kuning

CARA2:
1. Masukkan kesemua bahan2 ke dalam food processor / blender sehingga sebati.
2. Tuangkan ke dlm tin yg di lapik kertas aluminium & di minyakkan.
3. Bakar 180C selama 1 jam atau sehingga masak & garing permukaan nya.
4. Sejukkan sebelum di potong.



Durian Ice Cream (Aiskrim Durian)

 This may be the last series of durian menu from me this season... Actually I have more durian menu in mind but hubby already given me a strict instruction to rest - he said I've been working too hard in office and at home and must take some time to relax, no more unnecessary baking until end of the year... what a lovely hubby who cares... so I will try to obey....
  I created this ice cream from leftover durian crepe filling that I made earlier and to my surprise it is so delicious! No durian ice cream from the supermarket can beat this rich durian filled ice cream! My hubby was so impressed too!

INGREDIENTS:
250ml Milk
1½ tbsp Custard Flour
2 tbsp Sugar
¼ tsp Salt
1 Egg Yolk
200g Durian Flesh
200ml Non-dairy Whipping Cream


 METHOD:
1. Combine all ingredients, except whipping cream, until smooth.
Cook above small fire until thickened. Cool.
2. Whip the cream until stiff.

Add into the durian custard & mix well.
Place into a container and freeze for a day.
3.  Place ice-cream into a food processor & blend until smooth.
Place into a container & freeze again for another day.
4. Scoop out & serve!

Amacam... teringin tak Aiskrim Durian yang Along buat ni....? CikManggis dah dua kali tanya bila Along nak publish Aiskrim Durian ni. Along buat dah seminggu tapi belum sempat nak hidangkan, lagipun masih banyak entri2 sebelum nya yg beratur untuk di tayangkan - al-maklum tuan rumah ni cuma sempat buat satu entri untuk satu hari di sebabkan kesuntukan masa - cuma sedikit masa jer yg luang waktu malam.

Sebenar nya aiskrim ni Along hasilkan dari lebihan krim inti durian crepe hari tu. Banyak lebih, sayang nya jadi Along modify buat asikrim.... tak sangka sedap sesangat! Buat sendiri boleh lah tarok durian banyak2, tak macam yg di jual di kedai kan... uuuuuiiiiiiiiiihhhh.... sedap tau!

200g Isi Durian
200ml Non-dairy Whip Cream

 
CARA2:
1. Satukan kesemua bahan, kecuali whip cream, sehingga sebati.
Masak sehingga kental dgn api kecil.
Sejukkan.
2. Pukul whip cream sehingga bertanduk.
Satukan dgn kastad tadi sehingga sebati.

Masukkan ke dalam bekas & bekukan sehari.
3. Masukkan aiskrim ke dalam food processor & blend sehingga gebu.
Masukkan ke dalam bekas & bekukan sehari lagi.
Sedia untuk di hidangkan!

TIPS:
Untuk dapatkan aiskrim yg cantik bulat licin, pastikan yg aiskrim betul2 beku dan celupkan scoop ke dalam air sebelum ceduk aiskrim.

Durian Ukak Fritters (Durian Ukak Goreng)

 I thought I was going to stop new entry on durian.... but I just cannot help myself.... this God creature is really heavenly delicious that I can create so many things out of it. Last year was hardly any durian through out the year in Miri but this year was abundance! I bought 7 Durian Ukak for only RM10 few days ago!

The flesh is firmer than typical durian, so I imagined that it must be nice if I deep fry it. I was absolutely right.... it turned out to be so delicious that Liana ate 3 pieces! She hardly ate anything much after recovering from the recent fever and am delighted to see her enjoying it. Ukak is known as non-heaty, not like the typical durian so I'm sure it is ok to feed Liana with it.

Read more about durian Ukak in my previous entry here. The obvious distinction from the typical durian is its vivid color (however this one is lighter), much smaller size (about a human palm size), hair around its stem, soft thorns, firmer flesh and less stenchy. One may mistaken this from Durian Isu that I shared earlier here due to similar size and vivid aorange color but you can tell from the shape of the thornes - they taste very different too which I don't know how to describe it.


 
To make durian fritters, dip the pulps (with seeds intact) into your favourite fritters batter. Deep fry until batter is crispy. Serve for morning or evening tea. I used the batter recipe from here.

Hari tu kata tak nak tayang menu durian dah, kan dah berderet2 menu durian... hehe tak boleh tahan godaan durian ni lah.... ni lepas geram sebab tahun lepas Miri takda durian sangat tapi tahun ni mmg berlambak2 & harga pun murah. Along beli Durian Ukak ni cuma RM10 untuk 7 biji. 

Sebelum ni dah ada Along tayang Durian Ukak kat sini. Durian Ukak ni tak sama dengan Durian Isu yg Along tayangkan baru2 ni kat sini. Rasa nya amat berbeda walaupun isi nya sama berwarna jingga terang. Ukak ni berbulu di tangkai nya, isi nya lebih pejal dari durian biasa, bersaiz kecil sebesar tapak tangan jer dan bau nya tak kuat sangat. Along memang suka makan Ukak di bandingkan dengan Isu.

Along saja jer cuba nak goreng sebab banyak Ukak yg Along beli tu tak abis makan begitu sahaja. Along bayangkan isi nya yg pejal tu tentu sedap jika di goreng - memang tepat sekali bayangan tu.... isi yg digoreng tu rangup di luar & kenyal2 di dalam. Anak2 & hubby kata sedap.... Liana pun makan sampai 3 ketul. Durian Ukak ni tak panas badan jika di makan banyak, jadi takda masalah kasi bebudak makan.

Untuk resipi:
Celupkan ulas durian (dgn biji nya sekali) ke dalam tepung gorengan & goreng dgn minyak dalam sehingga tepung nya rangup. Boleh guna resepi apa2 pun utk tepung gorengan tapi Along suka resipi HaSue yg Along dah buat banyak kali - boleh rujuk di sini.


Green Bean Vegetable Curry

 Simple lovely dish that goes well with any rice or roti. Utilizing the gift from a lovely friend... she gave me a packet of green beans which she suggested for Kuih Angku filling but this dish is my favourite especially nice to go along with roti canai.

INGREDIENTS:
1/2 cup Peeled Green Beans
1 tbsp Curry Powder
1 tsp Turmeric Powder
Assorted veg - carrot, long beans, brinjal, potato
Coconut Milk
1 Cinnamon stick
3 Shallots*
1 Garlic* (*sliced) 
Salt

METHOD:
1. Boil green beans until cooked.
2. Place all ingredients in a pot, except shallots & garlic.
Cook until boiled and veg are soft.
3. Heat up few tbsp oil & stir-fry onion & garlic until golden brown.
Pour oil & onions into the cooked curry.
4. Serve with rice or roti.

Ini lauk yg mudah di sediakan dan kesukaan Along dari kecil dan Along suka makan ni dengan roti canai. Baru2 ni sahabat Along dari KL beri sebungkus, katanya untuk buat inti Kuih Angku. Tapi takpa lah kan sis, Along buat lauk ni jer sebab dah lama tak masak lauk ni. Kalau rajin, belen tu nanti Along buatkan sesuatu lain pula ya. Kacang hijau ni tak da pula terjumpa kat Miri ni.

1/2 cwn Kacang Hijau tak berkulit
1 sb Serbuk Kari
1 st Serbuk Kunyit
Sayuran - karot, kcg pjg, terung, kentang
Santan
1 bth Kulit Kayu Manis
3 ulas Bwg Merah*
1 ulas Bwg putih* (*hiris) 
Garam

CARA2:
1. Rebus kacang hijau sehingga empuk.
2. Letakkan kesemua bahan2, kecuali bwg*, ke dlm periuk & masak sehingga mendidih & sayur empuk.
3. Panaska beberapa sudu minyak & goreng hirisan bawang* sehingga garing.
Tuangkan minyak & bwg ke dalam kari sayur.
4. Hidangkan bersama nasi atau roti.

 This was once popular amongst the blogger but I could only manage to try it out yesterday. It was for our family picnic at the beach. The texture was moist but a bit too sweet to my preference. I'll reduce the sugar a bit if I were to make this again. Somehow the two boys and Liana didn't show an interest too, not sure why.... Overall I think it tastes good with the melting bitter chocolate chips which AlongRiz brought back from US several months ago.

Makes 13"x9" tin
(I made half portion of below recipe in 8" round tin)
INGREDIENTS:
2¾ cup Flour*
2½ tsp Baking Powder*
½ tsp Salt*
(* sifted)

150g Butter
300g Light Brown Sugar
3 Eggs (I used 2 small for half portion)
1 tsp Vanilla Essence
270g Chocolate Chips


METHOD:
1. Combine butter and sugar using a mixer until blended.
Add eggs, one at a time to sugar mixture, mixing on low in between each addition.
Add vanilla and mix.
Add flour and mix until combined.
Stir in chocolate chips.

2. Pour into lined & greased tin.
Bake at 170C for 30 minutes or until top is golden brown.
Make sure you don’t over bake!

Along sekeluarga berkelah di tepi pantai kelmarin.... takda cuti panjang, jadi kita orang bersantai di Miri sahaja lah. Subuh2 lagi Along buat kek ni dan masak Mushroom Cheese Pasta. Cuaca amat baik, seronok nya Along bersantai di tepi pantai dgn angin sepoi2 sambil baca buku " A Doctor In The House" yg Along dah lama di beli tapi takda masa nak abiskan.... Hubby lak gi jogging kat tepi pantai & Liana main sand castle... dah berapa hari merengek2 nak main sand castel... hitam Liana berjemur tapi seronok amat. Tak sempat nak abiskan banyak membaca, tetiba AngahRuz pucat lesi sakit perut... kita pun gulung tikar jerlah & bawa dia ke Columbia Asia... rupa2 nya dia sakit perut side effect antibiotik yg dia makan sebelum ni kerana demam. Selepas tu kita orang pun terus balik rumah.....huuuuu

Kek ni popular tahun lepas tapi Along baru ni sempat mencuba. Kek nya agak manis pada selera Along, kena kurangkan sedikit gula nya. Kek nya sedap & lembab kena pula dengan bitter chocolate bits yg AlongRiz beli kat US. Entah kenapa tak laku pula kek kali ni... my two boys & Liana cam tak heran langsung.... agak nya musim demam ni selera pun kurang...
