HAPPY BIRTHDAY Liana... she is 4 today!

Liana is four today....! We booked two cakes for her celebration in schools before school holiday but unfortunately she had fever and it was cancelled. She will celebrate it with her school friends after school reopen two weeks later. Let's join us to well wishes our only princess in the house....


Alhamdulillah, Liana empat tahun hari ini. Takda buat celebration pun untuk dia.... cuma wishes and doa semuga Liana panjang umur, sihat, besar menjadi anak yg solehah, beriman dan di pelihara Allah senantiasa. Insyaallah, nanti dia celebrate dengan kekawan kat sekolah. Abah dia dah book satu cake tema princess kegemaran Liana untuk sekolah dan satu lagi Power puff Girls untuk celebrate di taska. Liana dapat surprise gifts from lovely AuntieNorjanah kelmarin... menjerit excited apabila Liana dapat bag princess warna pink dan sehelai red swimsuit Tinkerbell.

 Liana insisted that she wants to pose some photos on her actual birthday date and cannot wait until the celebration with her friends which is planned in two weeks time in the school and the nursery.... so we bought a little cake which she chose herself for purpose of mini celebration at home and posing some photos specially for all aunties and kakak out there....! Mmmmmuah2 and lots of hugs from little Liana... thank-you so much to everyone who wished and prayed for her yesterday.

Telur Ikan Masak Lemak Harum (Fish Roe in Spicy Green Broth)

 Hubby bought a huge piece of fish roe... not sure from what fish species. I fried half of it earlier on and the remaining half into this dish. It was surely very delicious.... whole family enjoyed the rare piece...!

INGREDIENTS:
Fish Roe
3 Shallots*
1 Green Chili*

Some Chili Padi*(*pounded)
1 tsp Turmeric Powder
1 bowl Thick Coconut Milk

1 Lemongrass - bruised
1 Turmeric Leaf- sliced finely
1 piece Dried Tamarind
Salt


METHOD:
1. Place all in a pot & stir all the time until boiled.
Boil further until fish roe is cooked.
2. Serve with white rice.

CARA2:
1. Masukkan kesemua bahan ke dlm periuk & kacau sehingga mendidih & telur ikan masak sepenuh nya.

Apple Strudels (Again)

 This was last week end project that was specially made for AngahRuz before he returned to KL. It was baked just in time, 10 minutes before he left for airport.... he had to blow each spoon to cool it down before able to bite...LOL.... wished I had ice-cream to topple but unfortunately it was a rush job after a last minute thought... Afterall, I'm glad my love one had his favourite bite before I see him again in next semester break.


Recipe was posted earlier here with step by step illustrations were included.

Makes 2 big Strudels
INGREDIENTS:
2 sheets Puff pastry
4 Fuji Apples - peeled & sliced
30g Butter
1 tbsp Honey
1/8 cup Brown Sugar
1/2 cup Raisins
1/4 cup Ground Almonds / Hazelnuts- this time I skipped this
1 Egg - lightly beaten
2 tbsp Brown Sugar + 1 tsp Cinnamon

METHOD:
1. Heat butter & cook apples for about 2 minutes.
Add in honey, sugar & rasins & cook until sugar dissolves.
Cool.
2. Fold pastry into half & cut 2cm interval (see link for illustration but this time I used slit cutter).
Open up the folded sheet & sprinkle almond & apple filling.
Seal edges with egg.
3. Place seam-side down on a baking tray.
Brush top with egg & sprinkle with sugar & cinnamon mixture.
4. Bake 220C for 20-25 min until golden & crispy

2 keping Puff pastry
4 bj Epal Fuji - kopek kulit dan hiris
30g Butter
1 sb Madu
1/8 cwn Gula Perang
1/2 cwn Kismis Hitam
1/4 cwn Serbuk Almond- kali ini Along tak letak
1 bj Telur - pukul sedikit
2 sb Gula Perang + 1 st Serbuk KayuManis

CARA2:
1. Panaskan butter & masak hirisan epal selama 2 minit.
Masukkan madu, gula, kismis & masak sehingga gula hancur.
Sejukkan.
2. Lipat dua pastry & hiris2 seperti gambarajah (kali ni Along guna cutter pastry).
Buka lipatan, tabur almond & ratakan hirisan epal yg di masak tadi.
Tutup filling & gam lipatan dgn telur.
3. Terbalikkan ke atas dulang pembakar.
Sapu permukaan pastry dgn telur & tabur sampuran gula & kayumanis.
Bakar 220C selama 20-25 minit sehingga keperangan.

 Sarawak authentic fruit.... Dabai is one of a kind... I've created a new dish by combining smoked fish and Dabai into West Malaysian Style Sambal.... it was really an appetiser for my breaking off fast today!

Alhamdulillah, selamat berbuka puasa untuk hari ini.... ini selera kampung jer tapi syok nyaaa.... ada pula Ulam Mangga Muda cicah Sambal Tempuyak.... walaaaa... tak yah lauk lain dah!

Along rekakan lauk hari ini mengikut selera sendiri.... Jeruk Dabai dan Ikan Salai Masak Sambal! Orang Semenanjung memang suka masak cili pedas camni.... bagi kekawan dari Sarawak boleh lah mencuba juga ya, sangat meyelerakan.

BAHAN2:
Seketul Ikan Salai - di siat2kan 
15 ketul Dabai Jeruk atau Dabai Fresh yg sudah di lembutkan
1 ulas Bwg Putih - tumbuk 
1 bj Bwg Besar - hiris nipis 
10 sb Cili Mesin
1 sb Air Asam Jawa
Garam, Gula

CARA2:
1. Panaskan sedikit minyak & tumis bwg putih & bwg besar sehingga layu.
Masukkan cili mesin & kacau sehingga wangi.
Masukkan air asam, garam & gula; kacau sehingga mendidih.
Masukkan ikan salai & buah dabai.
Kacau sehingga rata.
2. Hidangkan dgn nasi putih panas.

 Belated entry.... made this a week ago for AngahRuz before he returns to KL... I had this 15" long fish in freezer for quite a while and just the right time to sacrifice... my two boys love this dish so much... AngahRuz complaining that he had Mamak dish almost everyday nearby his university so tried my best to cook his favourite while he was at home.

INGREDIENTS:
1 largewholeFish
½ tsp Turmeric powder
3 cloves Garlic - pounded
1" Ginger - bruised
3 tbsp Chilli paste
5 tbsp Chilli sauce
½ cup Water
1tsp Cornstarch + sufficient water to form paste
1 Big Onion- sliced into thick rings
Vegetables - Jack Beans, Needle Mushrooms, Carrots, Tomato, Baby Corns, Flower Mushrooms
5-7 Kafir Lime Leaves
1/2 tbsp Sugar
Salt

METHOD:
1. Rub fish with salt & turmeric powder and deep fry until cooked.
Dish up.
2. Heat up few tbsp oil & stir-fry garlic until fragrant.
Add in chili paste and stir for another minute.
Add in bruised ginger, chili sauce, water, cornflour paste, salt, sugar until boiled.
Add in lime leaves, big onion, vegetables and stir few more minutes.
Pour onto the fried fish.
3. Serve with white rice.

1 ekor Ikan
½ st Serbuk Kunyit
3 ulas Bwg Putih - tumbuk
1" Halia - ketuk
3 sb Cili Mesin
5 sb Sos Cili
½ cwn Air
1 st Tepung Jagung - bancuh dgn sedikit air 
1 bj Bwg Besar- hiris
Pelbagai Sayuran - Kcg Parang, Cendawan Jarum, Cendawan Bunga, Karot, Tomato, Putik Jagung 
5-7 helai Daun Limau Purut
1/2 sb Gula
Garam

CARA2:
1. Lumur ikan dgn garam & kunyit dan goreng minyak dalam sehingga garing.
Angkat ke dalam pinggan.
2. Panaskan sedikit minyak & tumis bwg putih sehingga wangi.
Masukkan cili mesin & kacau sehingga garing.
Masukkan halia, sos cili, air, tpg jagung, garam, gula & kacau sehingga mendidih.
Masukkan daun limau, bwg besar, sayuran dan kacau beberapa minit.
Tuangkan ke atas ikan goreng tadi.
3. Hidangkan dgn nasi putih.

 We had lepak2, makan2 with Izzi and family yesterday before he moves on to work in KL next month. Fortunately, there is a long holiday break and we both are staying put in Miri despite all other friends disappearing somewhere with their families during the school holiday. It was fun catching up and relaxing whole evening....

 I missed Nazifah's photo.... too busy talking and not much photo snapping....LOL.

Below is the menu of the occasion, specially on Izzi's request:
1. Pengat Durian with Glutinous Rice
2. Spiral Pasta with Chicken & Mushroom Bolognese
3. Kuih Lompang (specially for Nazifah)
4. Banoffee Pie

We also had hot Johor Kerupok Lekor in the evening.... nice!

I made it few days ago for get-together with Izzi's family.... I told him long time ago about this indulgent dessert so it was straight away became one of the menu for the occasion. It is a very rich and scrumptious pie which my sons love so much... always with "emmmm.." sound by my children when eating it!


I had made it many times because it was always on demand by my children. Recipe was posted here& here before and each with slight variation. Recipe is pasted herewith again for ease of reference and also providing the Bahasa Malaysia translation.

(Makes 10" pie)
CRUST:
200g Digestives Biscuits
100g Melted Butter
- Mix well.
- Grease pie tin & press crumbs until fully covered.
- Bake 180C for 10 minutes & cool.

CHOCOLATE FILLING:
5 oz Bittesweet Chocolate
2/3 cup Heavy/Whipping Cream
2 tsp Corn Syrup / Honey (I used liquid glucose this time) 
3 tbsp Unsalted Butter
1 tsp Vanilla Essence

1. Place all choc, cream & syrup in a pot and heat until melted & smooth.
Off fire & add in butter & VE.
2. Pour into pie crust & fridge for 1 hour.

OTHER INGREDIENTS:
6 Bananas - sliced
1 can Toffee / Dulce de Leche
Whipping Cream
Cocoa Powder 

TO ASSEMBLE (here for step-by-step illustrations):
1. Spread toffee on top of chocolate layer.
2. Arrange sliced bananas until fully covered.
3. Whip cream untl stiff & spread on top of banana layer.
4. Sprinkle cocoa powder.
5. Chill at least 1 hour before serving.

CRUST:
200g Biskut Digestives
100g Mentega - cairkan 
- Campur rata & tekan ke dlm tin.
- Bakar 180C selama 10 minit. Sejukkan.

CHOCOLATE FILLING:
5 oz Bittesweet Chocolate
2/3 cwn Heavy/Whipping Cream
2 tsp Corn Syrup / Madu (Along guna liquid glucose kali ni) 
3 sb Mentega
1 st Esen Vanilla

1. Masukkan coklat, cream & sirap ke dlm periuk dan panaskan sehingga rata.
Padam api & masukkan mentega & EV.
2. Tuang ke dlm crust tadi & sejukkan dlm petisejuk selama sejam.

BAHAN2 LAIN:
6 bj Pisang - hiris
1 tin Toffee / Dulce de Leche
Whipping Cream
Serbuk Koko

CARA2 (tengok disini cara2 bergambar):
1. Ratakan toffee ke atas lapisan coklat tadi.
2. Susun hirisan pisang sehingga penuh.
3. Ratakan atau paipkan whipping cream.
4. Taburkan serbuk koko.
5. Sejukkan sekurang2nya sejam sebelum di hidangkan.


Kuih Lompang

 I made this for the recent gathering and specially for Nazifah because this kuih has no eggs or coloring but just simple ingredients of rice flour and palm sugar. It was served with grated young coconut plucked from my own sideyard...! They are cute size just nice for one bite! This traditional kuih has never been outdated due to its unique texture and taste.... the texture is more like pudding but firmer on the outside and softer in the inside... the success of making is determined by a hole formed in the middle.... the recipe measurement must be right. The sweetness level is also just right and look no further for Kuih Lompang recipe.

INGREDIENTS:
1/4 cup Sugar*
1/4 cup Palm Sugar*
1 Screwpine Leaf*
2 cup Water* (* Boil until dissolved to make sugar syrup & cool) 
1 cup Rice Flour
1/4 tsp Malay Alkali Lime Water
Grated Young Coconut

METHOD:
1. Mix flour, lime water and sugar syrup until smooth & filter.
2. Pour into moulds and steam for 20 minutes.
3. Serve with grated young coconut.

Kuih yang tak lapuk di telan zaman oleh kerana rasa yang unik dan tersangat enak jika kena pada buatan nya. Resipi Kak Hanieliza ni memang terbaik... Along pun pertama kali mencuba sayur Timun Dayak ni, adalah lebih-kurang macam Timun Sayur Air kat semenanjung tapi beza nya kulit yg ini agak nipis dan lembut. Sedap di masak rebus asam ala masakan kampung. Lain kali Along nak cuba masak lemak cili api campur ikan kembung pula, tentu sedap! Ada pula Sambal Tempuyak dan ulam Mangga Muda (petik dari pokok belakang rumah)... walaaa... selera nya makan nasi!

Pulut Panggang (Grilled Glutinous Rice Roll) (Again)

 There was some leftover steamed glutinous rice from the gathering the other day and I rolled it into this delicious rolls filled with Shrimp Serunding.... the aroma from the grilled banana leaves is really seducing!

BAHASA MALAYSIA VERSION
Kalau anda ada lebihan pulut kukus, boleh lah buat pulut panggang. Senang jer nak buat ni sebab semua bahan dah ada sedia.... daun pisang amik kat pokok belakang rumah, inti Serunding Udang pun dah siap ada... apa lagi gulung2 & bakar jer dah siap! Ni adalah antara kuih kegemaran Along & hubby pun sama. Kenyang gak sarapan dengan kuih ni dan Along simpan seketul untuk sahur pada malam nya kerana nak puasa qado keesukan hari nya.

Untuk resipi yang sepenuh nya, boleh lihat kat entri yg lepas di sini. Pulut panggang ni bentuk nya cantik bulat selinder, ni cara MIL yg ajarkan.

Kuih Som Som II

This is my favourite Malay traditional pudding which is plainly made of rice flour and coconut milk, served with either black or rose syrup. I chose rose syrup this time just the way my Emak and my 2nd brother like it. It was dessert for my breaking off fast two days ago.... so all long gone! LOL...

Makes: 9 pcs
INGREDIENTS:
50g Rice Flour
50g Corn Flour
800ml Coconut Milk
1 Pandan Leaf
1/2 tsp Salt

METHOD:
1. Mix all ingredinets into a pot & stir until thickened and shiny.
2. Pour into small moulds and cool.
3. Chill and serve with syrup.

SYRUP 
150g Sugar
100ml Water
1 Pandan Leaf
3 tbsp Rose Syrup
- Boil until sugar is dissolved. Chill before served.

Ni kuih tradisi lama yang tetap jadi kegemaran ramai.... walau pun bahan2 nya simple tapi tak kurang dari segi rasa.... resepi yg baik akan menghasilkan kuih yang lembut seperti puding.... Kali ni Along cuba resipi Nana dan tidak menghampakan..... amat puas hati dan hilang mengidam berpuasa..... Terima-kasih Along ucapkan kepada Nana. Along memang suka sirap rose tapi sirap gula merah pun Along suka gak (ada buat ni dulu).

2. Tuangkan ke dlm acuan2 kecil & sejukkan dlm petisejuk.
3.  Hidangkan dengan sirap.

SIRAP 
150g Gula
100ml Air
1 helai Daun Pandan
3 sb Sirap Ros
- Didihkan sehingga gula hancur. Sejukkan dlm petisejuk sebelum di hidangkan.


Best Ever Banana Muffins (Again)

 Liana's birthday celebration in schools were postponed until today when the schools were reopened. She had another two celebrations today... one in her morning session school and the other was in her afternoon nursery session. I prefer to give away homemade bakes for party packs to kids instead of sweets and unhealthy snacks. So that is the reason for making these muffins yesterday. I made 6 dozens altogether and give away together with drinks and balloons to kids which also served as breakfast for all Liana's classmates and teachers.

 My hubby just chopped a big bunch of bananas from our side-yard and they were all ripened.... lovely opportunity to turn them into party packs.... I made 6 dozens altogether, enough to serve two schools, gave away to some friends and our own consumption!

The recipe was posted here earlier on and pasted herewith again for ease of reference as well as the BM translation. This recipe has been my keeper for almost 10 years and definitely the best!

Makes One dozen
INGREDIENTS:
170g Mashed Ripe Bananas
3/4 cup Sugar
1 Egg - slightly beaten 
1/3 cup Melted Butter
1 tsp Baking Powder*
1 tsp Bic Soda*
1/2 tsp Salt*
1 1/2 cup Flour* (* sift together) 

METHOD:
1. Place bananas & sugar in a bowl & mix until combined.
Add in egg & butter gradually while mixing.
Fold in dry ingredients gradually until well mixed.
2. Spoon into muffin cups/tin.
Bake 20 minutes at 180C.

Note: This time I added some chocolate chips on top.

Ini resipi kesukaan Along yg hampir 10 tahun lama nya.... muffin ni lembut, lembab & gebu. Along ada kongsikan resipi ni di sini dulu tapi dalam BI. Kali ni, Along terjemahkan ke BM bagi sesiapa yg ingin mencuba. Senang sangat nak buat nya.

Along buat 6 bancuhan & dapat lah 6 dozen semua nya.... buat banyak sebab Along beri pada kawan2 Liana di sekolah semperna sambutan belated birthday Liana hari ini. Postpone sambutan di sekolah sebab Liana demam sebelum sekolah bercuti... jadi terpaksa tunggu sehingga sekolah buka semula hari ni. Along rasa lebih baik kasi homemade kuih kpd budak2 daripada beli gula2 & keropok, bukan shj lebih sihat, malah mengenyangkan juga.

CARA2:
1. Campurkan pisang lecek & gula sehingga sebati.
Masukkan telur, mentega sambil di kacau sehingga sebati.
Akhir sekali, masukkan campuran tepung* & gaul balik sehingga rata.
2. Sudukan ke dalam cawan muffins.
Bakar 180C selama 20-25 minit sehingga masak.

Nota: Along taburkan sedikit coklat cip atas nya.

 I was thinking for rich and flavorful rice and this was what I cooked last week for breaking off fast.... The Tomato Rice was served with Veg Dhal, Spicy Fried Rice and Cucumber Salad dressed with dates vinegar (a gift from a lovely friend).

Serves 3-4 persons
INGREDIENTS:
2 cups Basmati Rice - wash & drain
2 tbsp Butter / Margarine
Mixed Spices (Cinnamon, Star Anise, Cardamon, Cloves)
4 Shallots*
1 cloves Garlic* (*chopped) 
2" Ginger - bruised 
3-4 tbsp Tomato Puree
1 cup Evaporated Milk
2 cup Water
1 stalk Mint Leaves - chopped 
1 Pandan Leaf - knotted 
1 tsp Sugar, 1 tsp Salt

METHOD:
1. Heat up butter & stir-fry mixed spices & chopped shallots & garlic until fragrant.
Add in ginger, tomato puree & rice - stir few minutes until well mixed.
Pour into a rice cooker together with remaining ingredients.
Cook automatically until rice is done.
2. Serve with your choice of dishes.
I served mine with cucumber pickles, spicy fried chicken and vegetable dhal.

CARA2:
1. Panaskan butter & tumis rempah tumis, bwg* sehingga wangi.
Masukkan halia, puri tomato & beras - gaul sebati.
Masukkan ke dlm rice cooker bersama bhn2 yg lain.
Biarkan sehingga nasi masak sempurna.
2. Hidangkan dgn lauk pilihan anda.
Along hidangkan dgn acar timun mentah, ayam goreng berempah dan sayur dalca.

Assalamualaikum wmh..... Syukur alhamdulillah atas kurniaan Allah dapat bernafas sehingga ke hari ini dengan nikmat kesihatan, rezeki dan kebahagiaan.... Was really happy with such appreciation by the team.... thanks so much!

Checkerboard Cake for Birthday

 June is a very special month for my family because three members of the family born in June plus Father's Day is in June as well. This year I decided to bake a birthday cake for all three of us.... AlongRiz bought a checkerboard cake pans from USA for me a year ago which had not been used and therefore gave me an immediate solution without having to think too much of choice of cake.

Yields 9" round
INGREDIENTS:
5oz Semi-sweet Chocolate - melt & cool slightly (original recipe only 3oz) 
1 cup (227g) Butter
2 cup Sugar
4 Eggs
1 tbsp Vanilla Essence
4 cup Flour*
3 tsp Baking Powder*
1/2 tsp Salt* (* combined) 
1 1/3 cup Milk

METHOD:
1. Cream butter & sugar until white.
Add eggs one at a time, beating after each addition.
Add vanilla essence.
2. Add flour mixture* and milk alternately until well mixed.
3. Divide batter into two equal portions.
Mix chocolate into one portion (I purposely let the chocolate chunks instead of smooth mix).
4. Pour into three checkerboard pans following the box instructions (see step by step illustrations below).
5. Bake at 160C for 25 minutes and cool.
Stack up cake with chocolate ganache in between.
Coat cake all over with topping and decorate per your preference.

CHOCOLATE TOPPING

1 tbsp Butter
- Cook until melted & smooth.
- Use immediately.

1. Prepare batter & pan.
Sediakan adunan dan acuan

2. Pipe two batters alternately as shown.
Paipkan adunan selang-seli warna spt di tunjukkan

3. Carefully remove the divider.
Perlahan2 angkat divider.

4. Pour batter into 3 tins in above alternate colors.
Buat 3 tin dengan selangi warna spt rajah

5. 3 cakes baked & unmouded.
3 biji kek yg sudah siap di bakar

6. Stack the 3 cakes with choc ganache in between
Lapiskan ketiga2 biji kek dgn coklat topping

7. Coat cake all over with choc ganache.
Sapukan coklat topping ke serata kek

Pandan Bread Pudding (Bingka Roti Pandan Bakar)

 I had more than a loaf of stale bread leftover from the week.... bread pudding is always a solution to it! This time I made it with pandan flavour.... wow.... really nice aroma!

Yield 8" square
INGREDIENTS:
1 cup Sugar
1 cup Coconut Milk
2¼ cup Pandan Juice (blend 8 leaves with water & sieve) 
2 tbsp Butter
3 Eggs
1/2 tsp Salt
1 tbsp Pandan Paste
14 slices (520g) Bread - cubed 

METHOD:
1. Blend all ingredients, except bread, until well mixed.
Pour onto bread & soak for 5 minutes.
2. Pour 1 tbsp oil into tin & pre-heat in oven.
Rub the mixture with fingers & pour into tin.
3. Sprinkle sesame seeds & bake 180C for 1 hour.

 Assalamualaikum kekawan..... meh buat binga roti pandan ni.... sedap nya.... sangat harum dan rasa nya lemak2 sederhana manis, sesuai untuk sarapan atau minum petang.

Ada lebihan roti... entah camna teringin nak makan perisa pandan... dapat idea nak convert Kuih Bakar pandan Joayee jadi bingka roti... so Along gantikan tepung gandum tu dgn roti dan modify sedikit sebanyak resepi nya. Thanks Joayee sebab resepi Kuih Bakar tu mmg Along dah buat byk kali.

CARA2:
1. Blend kesemua bahan, kecuali roti, sehingga sebati.
Tuangkan ke atas roti & rendam sebentar selama 5 minit.
2. Tuangkan 1 sb minyak ke dlm tin & panaskan di dlm oven.
Ramas adunan tadi & tuangka ke dlm tin.
3. Tabur biji bijan & bakar 180C selama 1 jam.


Coconut Pie (Pai Kelapa Muda)

 I made these mini size pies out of coconuts plucked from our own yard. The coconut flesh is not too matured and just nice to turn into dessert. The aroma and taste was good but not as I expected and not like what I saw in the website. The crust did not magically self-formed as claimed. I guess I made mistake somewhere because I saw few other people successfully achieved it.

 Anyway, I still share the recipe herewith because it tastes good.... may be you will have better luck than me.

Size: 9"/10" round pan (I made seven 5" tart pan)
INGREDIENTS:
1 cup flaked or shredded coconut
3/4 cup sugar
1/2 cup Bisquick mix
1/4 cup butter or margarine - softened 
2 cups milk
1 1/2 teaspoons vanilla
4 egg

METHOD: 
1. Heat oven to 350°F. Grease 9-inch pie plate with shortening or cooking spray.
2. In medium bowl, stir all ingredients until blended. Pour into pie plate.
3. Bake 50 to 55 minutes or until golden brown and knife inserted in the center comes out clean. Cover and refrigerate any remaining pie.


Homemade Bisquick:
Blend 2 cups flour, 1 tsp. baking powder, 1 tsp. sugar, 1/2 tsp. salt.
Cut in 1/2 cup butter in a food processor until blended.
Store it in a Ziploc bag in the freezer until you need some.
If you don’t have a food processor, you can do it by hand with a pastry cutter or whisk.

Along buat ni sebab ada kelapa yg hubby petik dari sebelah rumah. Isi kelapa tu sedap di buat kuih sebab belum tua betul. Jadi Along pun cuba lah resepi yg nampak mudah ni.... rasa nya sedap cuma Along punya takda crust kat bawah nya.... tak taulah kat mana silap. Walau bagaimana pun, Along kongsikan resepi nya di sini sebab rasa nya sedap.

2. Campurkan kesemua bahan sehingga sebati & tuangkan ke dlm tin pai.
3. Bakar 50-55 minit sehingga masak & permukaan garing.

Homemade Bisquick:
Blend 2 cwn tepung, 1 st baking powder, 1 st gula, 1/2 st garam.
Process 1/2 cwn butter ke dlm adunan sehingga peroi spt serbuk roti.
Simpan dlm freezer sehingga di kehendaki.

Lay a split banana in a dessert plate. Scoop ice-cream on top. Drizzle chocolate sauce and sprinkle some colorful sweet rice.

BAHASA MALAYSIA VERSION

Assalamualaikum and Salam Ramadhan buat semua saudara muslims. Alhamdulillah, harini sudah dua hari kita berpuasa. Bagi Along sekeluarga, sambutan Ramadhan hanya lah menu ala kadar.... maklumlah mama yg sibuk seharian di pejabat & pulang kerja barulah bergegas ke dapur.

Hari pertama kelmarin, Along cuma masak Nasi Putih, Kari Daging, Sayur Keladi, Ikan Masin Bulu Ayam (pemberian sahabat sis Marina yg very thoughtful & baik-hati), Cucur ikan Bilis dan Banana Split. Banana Split ni special sebab Pisang Berangan pemberian dari CKS, sahabat seperjabatan. Jauh dia beli pisang berangan ni dari Tukau. Kat Miri susah nak dapat pisang ni & kalau ada pun harga nya mahal belasan ringgit sesikat.

Menu hari kedua lagi sempoi dari hari pertama.... cuma buat Nasi Ayam Goreng dan Bubur Nasi Arab (orang Taiping panggil Kanji Arab). Nak amik gambo pun tak larat bulan pose ni.... kalau nak resipi boleh klik kat link tu. Kalau sesiapa nak dlm BM, kasitau nanti senang2 Along alih-bahasakan ya.

Carrot Cake with Walnuts

 CF bought me a packet of walnuts during her holiday in New Zealand and asked me to make carrot cake. This carrot cake is my keeper for 9 years and in my opinion is the best of all carrot cake that I have tasted! If you like carrot cake with walnuts then this is the version to go for! The sweetness is moderate and the cake is moist!

I made the cake to treat my office mates a day before Ramadhan and received good feedback.

INGREDIENTS:
220g Caster Sugar
220ml Oil
4 Eggs
1 tsp Vanilla Essence
335g Flour*
1 tsp Bic Soda*
1 tsp Salt*
1 tsp Baking Powder*
40g Cornflakes Powder* (* combined) 
300g Grated Carrots
50g Raisins
300g Walnuts

METHOD:
1. Beat sugar & oil until well mixed.
Add eggs, one at a time.
Stir in VE.
Fold in mixed dry ingredients*.
Add in carrots, raisins & walnuts until well mixed.
2. Bake 160C for 50-60 minutes until cooked when tested with skewer.

Kek ini amat berperisa dan kaya dengan rasa walnut yg di imbangkan dengan campuran karrot & kismis. Campuran cornflakes tu yang buat kek ni sangat harum.

Masukkan campuran tepung* sehingga rata.
Masukkan carrots, kismis, walnuts & gaul rata.

2. Bakar 160C selama 50-60 minit sehingga masak (test dgn lidi).
